World-renowned restaurateur, cookbook author, entrepreneur, and co-founder of the world's best restaurant, Noma, Claus Meyer, has worked for more than 30 years to fight the misery and promote the possibilities and qualities of Danish food culture.
"I think there's a lot of spirit in the food. What I stand and cook is also much more than just calories. It's feelings, thoughts and a dream to express something meaningful.
When it comes to cooking, in my life, I've definitely learned the most by trial and error. What I know comes more from all the food I've made, all the bread I've baked, and all the cakes I've put together. Which, of course, I didn't come up with all by myself. My inspiration comes partly from France, but also very much from meals I've eaten elsewhere and things I've read. It's a good mix of things I've come up with and things I've seen others do."
