Ómós Guesthouse and Restaurant

Ómós is a 16-bedroom guesthouse and 40-seat restaurant on the edge of Abbeyleix, Ireland. Led by Irish chef Cúán Greene, formerly of Copenhagen’s Noma and Geranium, the project was born of a desire to shift how we view hospitality.

Through an interior architecture process that prioritises the surrounding land, human experience, and material storytelling, the restored Victorian guesthouse and newly built restaurant create a design-led experience from the moment you step onto the property.

Born in Dublin in 1992, Cúán was raised in an Irish-speaking household by artists Róisin de Buitléar and Terry Greene. While always interested in art and design, he was drawn to the creativity and camaraderie of kitchens at a young age, starting an apprenticeship in southern France at the age of 15.

Cúán’s time spent in Copenhagen left the Ómós founder with a strong appreciation for Scandinavian design and quality. This led Greene to tap Denmark-based Cassandra Bradfield, Co-Founder of Asca Studio together with Sofia Olsson, and Rebecca Norberg of Relief Gallery, to lead the project’s interior architecture as some of the project’s first partners.

The design language was developed over a three-year period. An interior-first approach informed the architectural build, resulting in a project in which the furniture, lighting, and tactile surfaces are as integral as the buildings themselves. Presenting a unified decorative narrative through repetitive symbols across millwork and décor, all inspired by Irish folk craft, the space feels unified despite each room’s unique interior palette.

The project expertly blends local art, millwork, materials, and historic furniture with high-end international collaborations, creating a dynamic environment that honors the Irish vernacular while integrating contemporary luxury.

Bradfield and Norberg have designed several bespoke interior systems and furniture collections that were produced locally, alongside designs produced by globally renowned partners specifically for the project.

The design team, which also includes Ryan W. Kennihan Architects and landscape architect Edward Shackleton, has created a site that balances 4.2-acre scale with a build that feels intimate and serene.
